Thankful I took a picture before plating because they got a little messy when I took them out lol 😂 but here are some Vegetarian Enchiladas!
1 can of corn
1/4 Cup of reduced fat cream cheese
1/4 Cup Greek Yogurt
1/4 Cup Mexican Cheese Blend (plus 1/2 Cup or so to sprinkle over top)
1 can black beans, drained
1/4 Cup of salsa
1/4 Cup of cilantro, chopped
5 scallions, thinly sliced
1/4 teaspoon of chili powder
1/4 teaspoon of cumin
8 flour tortillas
1 10oz can of red enchilada sauce
1. In bowl, mix cream cheese, yogurt, cheese, beans, corn, salsa, cilantro, scallions and seasonings.
2. Lay out Tortilla shells and place an even amount of mixture on each Tortilla shell.
3. Roll up shells and place in 9x11 or 9x13 dish. Pour enchilada sauce over top, sprinkle cheese on top.
4. Bake at 375 for 20-30 minutes. Add cilantro and scallions to top and a drizzle of Greek Yogurt (if you'd like)
