When your hubby is as carnivore as it gets and kids are pasta monsters. How to keep it clean? My biggest thrill is taking comfort food favorites and making them healthier. Meatballs. Traditionally filled with bread crumbs and Parmesan cheese. We be clean eating so it's got to be #glutenfree
. And definitely need more veggies.
Added in shredded carrots and chopped up green peas (straight from freezer to the chopper #howiroll
). Swapped the bread crumbs with ground up gluten free crackers (taste is already there and it's quick!) and used nutritional yeast in lieu of the cheese. Added in 3 eggs as a binder, chopped up fresh parsley, 1 tbsp of minced garlic, 1 diced up onion, and added pink salt and pepper.
Helpful hints. I had no idea how these were going to turn out in terms of seasoning. I took a very small meatball, flattened it out and cooked in pan before I cooked the rest of the batch. Taste for seasonings and adjust s&p and or garlic to your liking.
I pan fried all the meat balls to brown them (no oil necessary) and then finished the cooking process in the oven. Used fresh tomato sauce bought from the bakery and used brown rice vermicelli pasta (all we had on hand... we are due to go shopping!). Family smashed them. #dinnersuccess #mommywin
